Broccoli crust pizza

Going low carb isn’t always easy, mainly because we are so conditioned as a nation that meals that always contain some form of refined carbohydrate; bread, pasta or rice.

But it doesn’t have to be that way and your body will feel so much more alive without them.

Before Keto was even a thing, I was eating low carb on and off just because my body functioned like that at it’s best.

It was the difference between fatigue v energy.

Vitality v reoccurring viruses.

Bloating and constipation v regular easy bowel movements.

Emotional over reactions v balanced responses.

I was in control of myself like I’d never been before.

The answer is low carb. And good nutrition, of course.

Getting creative and knowing the healthy alternatives make all the difference.

INGREDIENTS

broccoli crust pizza

  • x 2 eggs

  • 2-3 cups of riced broccoli

  • 1/4 cup of Parmesan cheese

  • 1/4 cup of Mozzarella cheese

  • season with snp

pizza sauce

  • 2-3 tbsp tomato paste

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

  • 3 garlic cloves minced

  • season with snp

toppings (or your favs)

  • olives

  • pepperoni

  • sun-dried tomatoes

  • capers


Broccoli benefits

Broccoli is really high in Folate, making it great for fertility and folate is also needed in pregnancy. It’s high in vitamin C, making it a staple for the immune system and such a versatile veg.

I love it as a stir fry, with a splash of soy sauce, mushrooms and plenty of garlic.


Method

Pre-heat oven to 180 degrees F.

Line a baking tray with parchment paper, or use a non stick pizza tray + set aside.

BROCCOLI CRUST

Blitz the broccoli into 'rice' in a blender, then wrap in a cheese cloth and squeeze out any excess moisture.

Place broccoli in a large bowl. Add together the eggs, cheeses, and seasoning until fully combined.

Pour mixture onto the pre-lined baking sheet and shape into a pizza crust, about 15cm thick.

Bake crust for 10-12 minutes or until golden. Remove from the oven, add your pizza sauce and cheeses.

PIZZA SAUCE

Mix together the tomato paste, onion + garlic powder and minced garlic clove. add salt and pepper to taste.

TOPPINGS

Add your desired toppings (veggies or meat) and cheeses. Return to the oven and bake for an additional 10-12 minutes or until the cheese bubbling and golden.
