Naturally gluten free seaweed wraps

I don’t know why I hadn’t thought of this before and I’ve been grain free (intermittently) for about 15 years now. So when I decided to try making these at home I was delighted at how well they turned out.

Don’t get me wrong, I adore sushi and rice, but the digestion of rice is possibly one of the hardest grains to breakdown. Although it is classified as gluten free, ironically it has a very glutinous (meaning sticky) texture and initially Asian farmers bred it for that very reason.

However, due to that very nature when rice goes through digestive tract it acts as a binder, slowing your digestion down, often causing a slow elimination.

SCIENCE of digestion

Enzymes called lipase and pepsin are responsible for the chemical digestion in the stomach, they help process the food you eat into nutrients for the body to absorb and turn into energy. After a chain reaction of chemical digestion occurs the contents is then released down into the small intestine where 90% of absorption happens.

If however you are lacking in lipase or pepsin, or your mechanical digestion (peristalsis) isn’t working as it should then grains such as rice can be particularly detrimental to your health. Not only can it slow down elimination, but also block vital nutrients from being absorbed. Leaving you feeling sluggish, bloated, constipated and often gone on long enough with bad skin.

So having the brain wave of using Nori sheets instead of wheat or gluten free wraps without the need for rice was very exciting.

Not only are so simple to make, they are completely uncompromising on flavour and even better seaweed is rich in nutrients particularly iodine, which is needed for a healthy thyroid. NB: too much seaweed can cause thyroid issues.
