Tuna Mayo Cucumber Boats

These are quick, fresh, grain free, low carb and great for lunch or for a snack.

Tuna Mayo Cucumber Boats

INGREDIENTS

1 medium cucumber

145g tinned tuna drained and squeezed dry

3 tablespoons mayonnaise

2 tablespoons pickles minced (optional)

2 tablespoons celery minced

1 tablespoons red onion minced (optional)

¼ teaspoon dried dill

½ teaspoon Dijon mustard optional

salt and black pepper to taste

DIRECTIONS

Slice the cucumber in half lengthwise and scoop out the seeds to create a ‘boat’.

In a bowl, mix the tuna and salad ingredients together, then scoop into the cucumber boats.

For a more filling meal, serve with my quinoa chickpea salad.
