Mackerel Salad

This mackerel salad is really easy and quick. Ideally we would be using fresh mackerel, but chances are it’ll smoked and from a supermarket, but that’s not to say it isn’t nutritious.

Mackerel is an excellent source of protein and a good selection of B vitamins; B2, B3, B6, and B12 and of course vitamin D. The skin of mackerel is also full of minerals like copper, selenium, and iodine. It’s high in omega 3, which is great for cognitive, heart health and helps to reduce inflammation in the body. Plus although mackerel is known as a fatty fish, it actually helps to reduce triglyceride levels (the bad fats) which contribute to cardiovascular disease.

Mackerel Salad

INGREDIENTS

140g Smoked Mackerel

4 cups of rocket leaves

2 inches Cucumber sliced

100g of cherry tomatoes

Cracked pepper

1/2 lemon juice

DRESSING

Cesar salad dressing, or make your own.

DIRECTIONS

Slice the cumbers, halve the cherry tomatoes and add into a salad bowl with the rocket.

Drizzle your salad dressing and squeeze of lemon on top and toss until it’s thoroughly combined. Few grinds of pepper. Add the mackerel on top.
