Courgetti Bolognaise

This is never going to be pasta, but…! It is naturally gluten free and low carb, so you won’t feel bloated, or sluggish after eating it and it’s still delicious and nutritious!

Courgetti Bolognaise

INGREDIENTS

500g beef mince

400g tinned tomatoes or clean ingredient jar of bolognaise

2 large courgettes (400g)

1 onion

3 cloves of garlic

50g parmesan for toppings

1 tsp of salt and grinds of pepper

1 tsp of Cacao powder or plain chocolate powder, gives the sauce depth (optional)

Toppings - a good grating of cheddar or parmesan cheese. 1 tsp per person of Nutritional Yeast, it’s a great source of added B vitamins, particularly B12, we also just love it for the taste! Sprinkling of fresh Oregano (don’t use dried, it tastes flat in comparison).

DIRECTIONS

Sauté the onion in a pan until soft, then add the mince stirring until brown.

Add the tinned tomatoes or cheat bolognaise sauce and garlic and let simmer.

Cut the top and bottom off the courgettes and assemble onto the spiraliser, spiral, then set aside. Don’t worry if they’re not perfect, they still taste the same and are actually tricky to eat as one big spiral!

When the mince has had about 15 mins and well fused with the other ingredients, I like to use a handheld whizzer on the meat just to break it into finer mince.

Flash the courgetti in a frying pan with some olive oil and a good pinch of salt. Literally only for a couple of minutes, just enough to heat them, or they’ll go soggy.

Plate up and serve with the bolognaise, top with nutritional yeast, parmesan and freshly shopped oregano.

This is one of my favourites, gives a brilliant boost of iron (ladies, this is vital for a energised body) and a usual mid week staple.
